Mahlep (mahleb) is a fragrant spice made from the seeds of the St Lucie cherry. Its aroma brings notes of bitter almond and cherry.
It is used in doughs for bread, cakes and pastries and is especially suited to traditional sweet Easter breads, adding a delicate sweetness and nutty undertones.
Keep in a tightly closed pack or jar in a cool, dry place away from light and moisture to preserve the aroma.
